PHOTOSHOP HELP - TWO EDITS TO AN IMAGE AND INSTRUCTIONS ON HOW TO DO IT

I carved a strawberry with stem into a rubber stamp. I then stamped several strawberries onto a white piece of paper (see attached file) and scanned it into a .jpg.

I need to accomplish two things AND I need instructions on how I can do it myself in Photoshop CC (MacBook):

1. CHANGE THE BACKGROUND from white to green (RGB: 174, 217, 177) OR any other color that I want, and make it look EXACTLY like the stamp was stamped onto that color. In other words, I still want the stamp effect to look VERY realistic and keep all of the gradients of the stamp, but I need to be able to remove the white and replace the white background with any color I want.

2. CHANGE THE COLOR of the strawberry and stem to ANY specific RGB or CMYK color; however, I don't want to change it to a solid color - I still want the natural gradient you see in the stamp (for example, I want to change the red strawberry so that the darkest part of the strawberry = CMYK: 75, 45, 0, 0, with it getting lighter and lighter like the natural gradient of the stamp). I know you can change the color of an image using HUE/SATURATION, but it won't let me choose an exact color and I need to be able to pick the exact color.

I am looking for someone that can do this for me AND give me the step-by-step instructions so that I can do it myself in Photoshop CC (MacBook).

If you can show me that you can do this to my satisfaction with some examples, you can give me the instructions for how to do it after I accept the winning submission.
