Interior Design for old house under renovation

I've just bought an old house in Belgium and need it to be redesigned on the inside.
Here's the usual:
1. I don't have much money to pay you but I will pay what we agree upon.
2. I don't want to spend too much on the house as there isn't much left after paying for the house
3. We expect to spend a certain amount of money on the renovations which will be almost all for material. I have a very handy family and we hope to do most work ourselves.
I can send you the floor plans and indicate what can and cannot be done (walls that need to stay, walls that need to go etc.,). I will give you a list of what we want and provide photos from any angle you require. I can give you any and all details you require. (We can make some windows bigger, wider, we can also move some doors and remove some walls...that kind of stuff).
Needless to say, I'd like this done very, very quickly as we need to finalise plans and then order for double glazed doors and windows as that takes the longest time to be delivered
We would like ideas for where we should site the rooms, kitchen, bathrooms, toilets etc., and would require layout plans for the same. We need working drawings for all. I understand you could be from anywhere in the world so visits to the site will not be possible.
We need to do this as economically with minimum changes to the external structure as possible.

I am overwhelmed by the response which I didn't expect so am caught unprepared. I will have scanned copies of the floor plans as well as photos of the exteriors and interiors of the house over the weekend ready by next Monday.
