Hello, I can help with this. I have done solar cacao drying kilns in the past (in Indonesia). As you probably suspect, it is not super-hard, although in high-humidity locations, you may want to add some simple solar heating to the equation to bring down Relative Humidity. I am a solar engineer and former/semi-retired architect and have build all sorts of solar contraptions, from power to drying, to heating, to cooling, and I love this kind of 'First Principle Thinking'.
