Acceptance criteria 1. All recipes tested to yield within ±5 % of target portions. 2. Costing sheet shows itemized food cost, labor estimate, and gross margin per SKU. 3. SOP documents cover receiving, prep, holding, plating/boxing, and dispatch. 4. Menu, costs, and SOPs delivered in editable formats (Word/Google Docs + Excel/Sheets).
