Help me install Windows 8.1 on my SSD Hard Drive

My partner bought an Acer ES1-411-C2TL laptop. Specs: Windows 8.1 with Bing Intel Celeron N2840 Dual-core 2.16 GHz 35.6 cm (14") HD (1366 x 768) 16:9 CineCrystal AMD Shared Memory 2 GB, DDR3L SDRAM 500 GB HDD I have upgraded the Ram to 8GB (works fine with the old HD) and the bios but can not get Windows 8.1 to install on the hard drive I bought. It's a Patriot Blaze 2.5" 60GB SATA SSD Hard drive. When I install the hard drive and try and run Win 8.1 (I have tried a legit version + downloaded cracked version) or even Windows 10 (legit version) off a bootable USB (using Rufus), the Boot Menu can not see ANY bootable devices at all. I change the compatibility mode in the bios from UEFI to Legacy and can see the hard drive + bootable USB but it starts to install windows and then freezes. Windows 8.1 freezes on "Getting Device Ready xx%" Windows 10 freezes on a spinning wheel and Windows logo. I have left the laptop on over night with both in case it takes its time but it does not move at all. I can get Windows 7 to install (on Legacy mode) but can not get ANY of the drivers to install as the laptop is not compatible with anything below Windows 8.1. I have tried to run the bootable USD with ex-Fat & NTFS and have tried to turn secure mode off in the bios but it still will not work. I am after someone to tell me how to get windows to install and what I am doing wrong. I am some what ok at navigating a computer, just can not find the solution to this one. Please help!
