Adobe Fillable Form Submit via Web Server and email

I have an Adobe Fillable form that I would like to let customers submit electronically to a folder on our VPN that will save a copy and then email us and the customer a copy of their PDF form.
We did have this functionality set up using a perl script on the server and FDF toolkit, but after server and form updates it is no longer working.
Hoping to find an easier way to accomplish this task and allow for future changes.
