Currently we have three Prestashop websites all selling the same products but at different prices and we are using Linnworks to manage the stock across all three sites so if we have 10 units of a product and we sell 1 on one of the websites the other two websites would automatically reduce the stock level by 1 to ensure we do not oversell.
Linnworks however is causing us a number of issues and we need a solution which can work without Linnworks.
The current process is
We export a stock file from our fulfilment system daily which reset the stock level
We then use Linnworks to manage the stock throughout the day and download the online orders into our fulfilment system which then adds the online orders to the offline orders and then gives us our end of day stock position and we update Linnworks again and all websites are reset with the new stock position.
The ideal scenario would be for one stock position for online and offline but the offline SQL database and the online MySQL database are in different buildings and the MySQL is on a cloud server.
If there is a solution to sync the online with offline that would be great but that does also add a complication in the sense that if we are only importing online orders every 10mins the offline stock figure could only been updated every 10mins whereas we would need the online to update as soon as a product is sold.
So if online and offline sync is to complex we would at least like the online to work across multiple sites then reset twice a day with a stock figure which will be downloadable from our FTP which takes into account offline+online.
Also the status of the orders in Prestashop should have nothing to do with the stock levels/availability so if the stock level say 10 if doesn't matter if we have open or shipped orders in Prestashop only new orders would decrease the stock level.

Your project is fit very well on new Prestashop 1.5 "Multi-store management" feature. You can have different prices on store while have same stock. My recommendation is to wait for stable Prestashop 1.5 version.
