Modify firmware programming for thermostat controller

We have a temperature controller that we use for an egg incubator. It was developed for us several years ago and it is time to make some changes to the firmware. We have all of the original development files, but we are not programmers, so we are not able to do anything with them. For those of you who speak "code", you'll likely recognize and understand the files. We don't speak "code" so we're not sure what is useful and what is not. We have attached a file which shows a screenshot of all of the firmware development files we have for this.
This project includes the following:
1. Identify the the correct files needed to make edits to our firmware.
2. Make the changes requested
3. Send the modified firmware files along with the .hex file needed to upload the new version to the chip.
For your reference, the chip is: PIC18F14K22-E/SO
Requested change: the program currently allows the user to change the speed of a fan (vary the voltage). We would like this feature removed and just leave the fan on at full power. Pretty simple, right? :)
Please review the attachment and see if you can make sense of the files and if you think you can make this change. And if so, at what cost?
