Magento 2.4.3 - Elastic Search 7 Error 'text fields are not optimised for operations'

Project requires a Magento developer with experience with the platform and its development stack.
The issue is that products are missing from the catalogue and search pages. Front end message shows "Your search returned no results."
The following commands fixes the issue for a few hours, but then the problem persists and starts up again.
php bin/magento index:reset catalogsearch_fulltext
php bin/magento index:reindex catalogsearch_fulltext
php bin/magento c:f
This is a known Magento 2.4.x migration bug and the product listing issue on the category page or the ‘Text fields are not optimized for operations’ error is caused when a varchar or text field is set to filterable in elastic search.
This error has appeared after removing a 3rd part search module on the testing [login to view URL] module was overriding the Magento Elastic Search vendor code.
Attached is a screen shot of the exception.log. The developer will have access to the development area to trouble shoot and fix the error. Once the error is fixed, a detailed step by step explanation should be provided so I can complete these steps on a fresh test database and then the production environment myself. I wish to understand the true issue.
