I understand your current version of Prestashop is not stable and you need to downgrade also you need to remove only useless files like some developers keep the renamed old files and extra images and cache etc. I will make a sub domain and copy your shop there. So we will work on sub domain until you are satisfied then I will move to live. You need a professional and experienced programmer like who is bidding and working and doing everything at own because Prestashop is complex and less programmers understand it's MVC structure.
