Sounds like what you will need is Ansible. I can help you describe the existing host, including virtual hosts, and then we can run an automatic commission for the new server. Key to how long this move will take is the number of package dependencies. E.g. if there is a Django application with heaps of library dependencies, we need to ensure that we can freeze all of that ecosystem and transfer it. Without getting an EXACT freeze, you will very likely get into library hell. Also, each database will need to be dumped and moved & all references to files & folders will need exact user permissions. As I say, this is best done with an automation script so that downtime can be minimised. And it could take significant time. Very definitely it is a per/hour gig. I am a Python developer & Ansible /Debian expert, I can also migrate databases. If the sites are very simple, then the above might be overkill. I would need to know far more detail.
