Most interestingly I have just finished designing one similar (not exactly) product recently with MIPI DPI interface TFT Screen with STM32F429BIT6 MCU. I have over 25 years of experience in C programming and over 5 years in FreeRTOS and very good UI designing skills. For this industrial analog channels, I would suggest you to use discrete ADC (24bit TI Part) for better resolution and flexibility.
